The color is pale yellow. A very fine foam forms a ring of bubbles around the edge of the glass. The scent is intense and fruity, with hints of banana, pineapple and apple. On the palate we can feel liveliness and freshness, conferred by a good acidity. The carbon dioxide that gently spreads out on the palate is soft and pleasant. The wine is balanced and harmonious with a hint of acidity that gives freshness to the whole. The fresh notes are persisting even after the swallowing.

One hour of skin contact and cold maceration, prepares the grapes for soft crushing. The must is clarified and fermented at controlled temperatures (17°C.). The final cuvée consists of 90% clear wine and 10% of the previous vintage wine, aged in French oak barriques. Fermentation takes place in the bottle (Classical Method). Yeast contact is extended for at least 24 months followed by traditional hand riddling (rémuage) on pupitres and dégorgement à la glace. A period of bottle aging follows.

In the final phase of fermentation, the temperature is slightly raised in order to facilitate the extraction of pigments from the skins, giving the wine a deeper color. The wine is aged in French oak barriques for 12 months.
